Cut 5mm slices of the goats' cheese and smear onto the central third of the surface of the Pringle. Place in the oven at 125 degrees Fahrenheit until the cheese is melted.
Chop a cherry tomato into thin slices and place 2 slices onto the goats' cheese on each Pringle. Return to the oven for 2 minutes and serve warm. The tomato can be replaced with slices of leek for extra Welshness.
