Piping (also known as 'Pipetting')

This technique allows the precise placement of small quantities of ingredients. Whilst a difficult technique to master, it can prove invaluable in cases where smearing and spooning prove to be insufficiently accurate.

click for a larger image Take a surgical or cosmetic pipette. Draw a little of your desired ingredient into it, place carefully over the area to be coated, and squeeze the pipette to deposit the ingredient right on target. Pictured here is a pipette with some of the basil paste used in a Herby Cream Cheese and Onion Pringle, although it should be noted that piping is not necessary for this recipe. The technique is essential in the All Day Breakfast recipe.
